Mor Kulambu| Buttermilk Curry with white pumpkin

Ingredients Required:

1. White Pumpkin – 250 grams
2. Oil - 2 Tbsp
3. Mustard Seeds - 1 tsp
4. Asafoetida
5. Urad dal – 1/2 tsp
6. Small onion - 7
7. Turmeric Powder – 1/2 tsp
8. Curd - 1 Cup
9. Salt
10. Curry Leaves
For Grinding
9. Coconuts - 1/2 cup
10. Cumin Seeds - 1 tbsp
11. Fennel Seeds - 1 tsp
12. Roasted Gram - 2 tbsp
!3. Garlic - 2
14. Green pepper - 1
15. A small piece ginger
16. Coriander leaves Optional

Method:

Step 1: Add oil in pan, let wait for 2 mins once oil gets hot, add Mustard seeds, asafoetida, urad dal once the mustard seeds popped add in onions and saute it for a minute.
Step 2: Once onions cooked, add nicely cubed white pumpkin saute it and then add, a cup of water, turmeric powder and salt mix it well.
Step 3: Cover it and cook until your white pumpkin to get soft. Add in grounded paste, mix well and let it for one boil.
Step 4: Add curd with a half cup of water and mix well without any lumps. Finally, add with curry and let it in stove for a minute.

Potatoes: 1 large size
Garlic : 2 Mashed
Oil: 2 Tbsp (any cooking oil)
Turmeric powder: 1/2 tbsp
Red Chili Powder: 1 tsp
Coriander Powder: 1 tsp
Salt to taste

Instructions:

Step 1: Heat 2 tbsp of oil in a nonstick pan.
Step 2: Add in mashed garlic and saute it to get nice aroma.
Step 3: Add in small cubes of potatoes and saute until it turns light brown.
Step 4: Add chili powder, turmeric powder, and coriander powder with salt and saute it for 3 to 5 mins.
