- In a pan pour 2 tbsp oil once oil gets hot, add cumin seeds, urad dal, chana dal, asafoetida and saute for a few seconds. Next add, chopped ginger, garlic and saute it.
- Next, add Onion, green chili, and a pinch of salt to roast onion, after onion get roasted add, coriander powder, turmeric powder and mix well.
- Add nicely washed spinach and cook well until the raw smell is gone. Finally, add tamarind and salt as needed.
- Cool it, add to a mixer jar make a paste and transfer to serving bowl. In a small pan, pour 1/2 spoon oil, add mustard seeds once the mustard seeds get popped, add curry leaves and dried red chili mix it with chutney and enjoy with hot rice, or side dish for idly, dosa and chapathi.
