Quick and easy Beetroot Chutney

Beetroot chutney

Ingredients Needed:

  • Grated Beetroot: 1 Cup
  • Chana dal: 3 tbsp
  • Urad dal: 2 tbsp
  • Red chili: 2 Nos
  • Cumin Seeds: 1 tbsp
  • Asafoetida a pinch
  • Garlic: 2 to 3 medium size
  • Grated Coconut: 4 tbsp (0r) Coconut pieces
  • Tamarind small piece
  • Turmeric a pinch
  • Curry leaves as needed
  • Salt as needed
  • Mustard Seeds: 1 tsp
  • Oil: 1 tbsp

Instruction:

  1. In medium size pan, add oil, cumin seeds, urad dal, chana dal and red chili and saute it to get roasted. A nice aroma will come.
  2. After that add asafoetida, garlic, chopped beetroot, turmeric, salt as needed and cook it in low flame for 5 mins.
  3. Finally, add tamarind, grated coconut and off the flame.
  4. Cool it, add to a mixer jar and make into a fine paste using little water.
  5. For temper, add oil in small pan, mustard seeds and urad dal once the mustard seeds get pop, add curry leaves and be safe while adding curry leaves, finally mix this temper to chutney and happily enjoy with idly, dosa, chapathi or rice.
Note: If you use Coconut pieces instead of grated coconut, First add coconut pieces into mixer jar and make a fine pieces to avoid lumps. You can also use chop beets into small pieces instead of Grated. My choice is to use grated beets because it will take less time to cook.
