Asparagus rice | Fried Rice

Ingredients Needed: 

  • Basmathi rice: 1 cup
  • Asparagus: 1 cup fine chopped
  • Carrot: 1 medium size
  • Cumin seeds: 1 tbsp
  • Oil or butter: 4 tbsp
  • Large Onion: 1/2 finely chopped
  • Garlic and ginger fine chopped: 1 tbsp
  • Homemade Sambar powder: 1 tbsp (or) 1/2 tbsp chili powder + 1/2 tbsp coriander powder
  • Cloves: 2
  • Salt
  • Coriander leaves for garnish

  Instruction:  

  1. Add 2 cups of water in a pan with 1/2 tbsp salt,1 tbsp oil let it to boil, Add washed basmathi rice in the water and cook it until soft.
  2.  In a saute pan, add 3 tbsp oil once oil gets hot, add cumin seeds, cloves saute it, then add, ginger, garlic let it fry with nice aroma, then add, onion and saute it.
  3. Next, add carrot and asparagus saute it and add sambar powder, salt and mix well then cover with lid and cook until soft in a medium flame to avoid burning.
  4. Then add, cooked basmathi rice, mix well and garnish with finely chopped coriander leaves and enjoy with crispy potato fry or curd.
