Beetroot leaves stir fry | Beetroot leaves Poriyal | Beetroot greens is very simple and quick side dish recipe. Beetroot
poriyal is one of south Indian style best healthy side dish for lunch.
Usually people thrown away beet leaves either by farmers or in market
actually it is delicious good taste. Using same method of cooking
poriyal to cook beetroot leaves poriyal (side dish). Adding grated coconut gives additional taste to every side dish
especially in south indian cuisine. You can use green chili instead red
chili. Clean the leaves in warm water or else in normal water to avoid
any dirt. Here i use leaves of 3 beets plant.
Beetroot Leaves Stir Fry:

Ingredients Needed:
- Chopped Beetroot leaves: 2 cup (leaves of 3 beets)
- Oil: 2tbsp
- Mustard seeds: 1 tsp
- Asafoetida a pinch
- Urad dal: 1 tsp
- Garlic: 2
- Onions: 3 tbsp
- Whole red chili - 1
- Coriander powder 1 tsp
- Turmeric Powder: 1/2 tsp
- Red chili powder: 1 tsp
- Grated coconut: 3 tbsp
Instruction:
Step 1: Chopped beets leaves and stem.
Step 2: Heat oil in a pan. Add, mustard seeds, split urad dal and cumin seeds.
Step 3: Add in garlic, onion,1 whole chili and saute it.
Step 4: Add chopped beet leaves and saute.
Step 5: Add in red chili powder, coriander powder and turmeric powder and saute.
Step 6: After 7 mins when the beets get cooked add in grated coconut.
